Baked Potatoes

Here's baked potatoes ala Asle! They are so yummy!

Ingredients
- 8 big potatoes (Depending on how many you are serving, 2-3 per person)
- Bacon
- Onion
- Corn
- Butter
- Cheese
- Sour cream

Sidesalad:
- Lettuce
- Cucumuer
- Capsicum
- Feta

- Garlic bread if you want!

How to do it
1. Boil the potatoes for 20 minutes and put the oven on 200C.

2. Make the spicy - butter to have in them when done.
Put the butter in a bowl

Put it in the microwave for 10 seconds to make it soft, then mix it together with a fork

Put season in - I used all-purpose seasoining and mix together

3. Cut the onion and bacon in small pieces

Fry it all quickly in a pan

4. Take the potatoes out of the water, put them in aluminum foil and put them in the oven for 10-20 minutes. (If you are not sure when they are done, you should open one potato and check just to be sure!)


5. Put the corn in with the onion and bacon and flavour with some salt and pepper

6. Make the salad
7. Open the potatoes

I normally put the butter on first so it melts

Then I put the bacon, onion and corn

Then cheese and the sour cream + some salt and pepper

You can also serve it with garlic bread if you want to!

Wedges with Cheese & Bacon

An extremely easy snack when you have people over! This is a really Australia "dish" - had never had it before I came here.. (Don't have great pictures of this one unfortunately)

Ingredients
- Wedges
- Bacon
- Grated cheese
- Sour Cream
- Sweet Chili Sauce

How to do it
1. Bake the wedges in the oven (10 minutes shorter than the instructions say on the packet)
2. Take them out and put bacon and cheese on top


3. Bake for another 10-15 minutes
4. Serve with sour cream and sweet chili! Easy as!

Breakfast in Bed

Made this simple breakfast for Asle in bed when he was sick last week..

It is only scrambled eggs, bacon and mushrooms, a baguette with ham and cheese and some cereal. And a glass of chocolate milk:)



Food is the way to a man's heart!

#23: Sweet and Sour Chicken

The other day Asle and I had sweet and sour chicken for dinner and it was sooo good (and so easy!) We used grilled chicken instead of chicken fillets, and I seriously loved it! Have been addicted to it since - so good in salads etc as well!

Ingredients
- Grilled chicken
- Broccoli
- Cucumber
- Snow-peas
- Kan Tong Cantonese Sweet & Sour sauce
- Rice

How to do it
1. Boil the rice
2. Cut up the vegetables

3. Fry the chicken in some oil (only for a minute or two as it is already cooked!)

4. Put the vegetables in the pan and fry it all for about 2 minutes
5. Add the sauce and heat it up - then ready to serve!

#22: Norwegian Waffles

Ok - long time no see, but I am back! Have been a crazy couple of weeks, and then my camera broke! But my hubby fixed it again:)

So - made yummy waffles with the girls that I babysit a couple of weeks ago! They are so easy to make, but you will need a waffle iron to actually make them... Putting this recipe out because some of my friends asked me to:)

Ingredients
- 100 g butter
- 4 eggs
- 4-5 tbs sugar (or more!)
- 1/2 ts cardamon
- 4 dl flour
- 1/2 ts baking powder
- 5 dl milk (you can replace some of it with cream or sour cream)

How to do it
1. Melt the butter and mix in all the ingredients (If you don't have a hand mixer and have to do it yourself, it is smart to mix all the dry things together first - with the butter - and then add the milk slowly in the end)
2. Let it rest for 15 minutes
3. Make them in the waffle iron
4. Serve with ice cream and maple syrup, or with sugar, or with jam - however you like them!

#21: Chicken Fillet and Bacon with Mashed Potatoes and Baked Vegetables

Lena, Eli, Asle and I had this for dinner on Thursday before Easter. Such a great night with amazing people and good food:)

Ingredients
- Chicken Fillets
- Bacon
- Potatoes
- Carrots
- Red onions
- Mushrooms
- Egg
- Garlic
- Cream
- Milk
- Sour cream
- Lemon
- Chives
- Sugar

How to do it
1. Peal the potatoes (10 or more - depending on how many people you are cooking for!) and boil them till they almost break into pieces (you can also cut them into pieces before boiling them - it goes quicker then!)

2. Slice the carrots, mushroom and red onion and put them on an oven safe tray. Put olive oil on and season well (I use salt, pepper and season all). Then bake them in the oven for 20 minutes or till they are done on 200C.

3. Meanwhile, cut the chicken fillets in half's, and roll the bacon around it. Fasten with a toothpick. Then put them in the oven for about 10-15 minutes. (They are not supposed to be done in the oven)


4. While the chicken is in the oven, make the salad dressing; Put sour cream (a normal package) in a bowl, and put 2 tbs of lemonjuice, 2 tbs of sugar, 1 garlic clove and chives in it. Tastes phenomenal! Then put in fridge until you serve the rest of the food

5. When the potatoes are done take the water off and mash them - show muscles! Then add some milk and cream (don't add too much - maybe just around 2,5 dl altogether) and then you can add some garlic, pepper and salt and maybe chives or leek if you want to! (Some recipes also add some butter and an egg in the end - this is optional, just make sure it tastes yummo!)


6. Then take the chicken out of the oven, and fry it in the pan till they are cooked all through - the bacon are not supposed to be all crispy, only a bit. If you are unsure, make one "extra" that you can check on - to make sure they are done. That's how I do it...

7. Take the vegetables out of the oven and put them in a bowl ready to be served. And remember the dressing! (We also had gravy/sauce on, as us Norwegians love our sauces...)


This might seems like a long recipe, but it is not hard at all and really tasty! Good luck!

About a month ago we got this in the mail from the states from our good friend Eli's mum - thank you so much Sonia! It has all been so handy, and I have definitely used it when cooking and cleaning in the kitchen. And I finally understood what 1 CUP meant when I got this - it is actually a measurement, it doesn't mean a coffee cup! Hehe!

#20: Vegetable Platter

This is not really a recipe, but just an alternative idea to unhealthy snacks - it always disappears before the chocolate when I serve it!

Ingredients
- Celery
- Carrot
- Cucumber
- Dip

How to do it
1. Cut all the vegetables in sticks
2. Serve with dip - EASY!

Just look how much more tempting this looks than the other things on the table! In my opinion at least:)

#19: Scrambled Eggs and Bacon

At Good Friday we had a yummy breakfast before going to church in the morning!

Ingredients
- 4 eggs
- 2 tbs water
- Chives
- Salt
- Pepper
- Bacon
- Mushrooms
- Season-all spice

How to do it
1. Mix the eggs, the water, salt & pepper and chives in a bowl
2. Put it into a frying pan and stir all the time till it turns into scrambled eggs
(By the way, scrambled eggs continue to cook for a while after you turn the pan off, so don't have them in too long!)

3. Fry the bacon in the pan on high heat till done

4. Fry the mushrooms in the pan and season with season-all

#18: Apple Pie

Ingredients
- 4 apples (or more - fill up the form)
- Juice from 1/2 lemon
- Sugar
- Cinnamon
- 2 dl sugar
- 2 dl flour
- 120 g butter
- (Almonds)

How to do it
1. Peal the apples
2. Cut them in small pieces and put them in an oven-safe form
3. Put the lemon juice, sugar and cinnamon over it

4. Mix together sugar and flour, and work the butter in with your fingers (this is easier if you cut the butter into small pieces first - DON'T melt it) Make it into a dough that sticks together
5. Put the dough over the apples so it covers most of the form (and put small pieces of almond on if you want to)

6. Bake on 200C for 15-20 minutes

Can be served with ice cream or normal cream

#17: Chicken Fillet with Roasted Vegetables

We had this for dinner last night and it was delicious!

Ingredients
- Chicken fillets
- Potatoes
- Carrots
- Mushrooms
- Red onion
- Garlic
- Oil
- Chicken gravy

How to do it
1. Cut the potatoes in wedges, cut the carrot in small sticks, cut the mushrooms in half and cut the red onion in wedges
2. Put all the vegetables in an oven proof tray, add garlic cloves and put oil over all of it - season to taste (I used salt, pepper and garlic&herb spice)

3. Put in the oven on 220C for 30-40 minutes - stir it occasionally (every 10 minutes)

4. Cook the chicken fillets and season well
5. Make the chicken gravy (I just used a 1-2-3 gravy from Norway)
6. Put it all on a plate - ready to serve!
