#5: Thai Green Curry

Today we had curry for lunch/dinner in between the services at church - very spicy but also very tasty!

Ingredients
- Chicken or pork (I prefer chicken!)
- Green beans
- Coconut milk
- Kan Tong Thai Green Curry sauce
- Rice

How to do it
1. Cut the chicken into pieces and fry them until they are cooked through
2. Add green beans for the last two minutes of frying
3. Add coconut milk and Kan Tong Thai Green Curry sauce in the pan

4. Serve with rice and basil leaves

Why did I suddenly get interested in cooking?
Simply because I got this recipe book from my mum for Christmas that I decided I wanted to fill out with interesting recipes!

#4: Brownie Muffins

These ones are nice little treats!

Ingredients
- 150g dark cooking chocolate
- 100g butter
- 2 eggs
- 1,5 dl sugar
- 2 dl flour
- 1 ts baking powder
- 2 ts vanilla sugar/icing sugar

How to do it
1. Melt the chocolate and the butter and mix together
2. Mix the eggs and the sugar
3. Then put in the flour, the baking powder and the vanilla sugar, and finally mix all the ingredients together
4. Fill the muffin forms half full and have almonds in if you want
5. Bake on 200C for 6-8 minutes (and serve with vanilla ice cream!)

5 a day!

Do you guys ever struggle eating your "5 a day?" I do!
However, having a delicious fruitbowl at the table sure does help a lot!
To me, there is nothing more tempting than fresh, colourful fruit!

#3: Chicken Salad

Today we had chicken salad for lunch/dinner - healthy and yummy!

Ingredients
- Chicken
- Lettuce
- Corn
- Capsicum
- Red onion
- Cucumber
- Pineapple
- Cheese
- Ranch dressing

How to do it
1. Cut the chicken in pieces and fry on high heat - season with "all season", "herb&garlic" and salt

2. Cut the salad, capsicum, onion, cucumber, pineapple and cheese in pieces, and mix all the ingredients in a bowl

3. Add the chicken when cold and serve with dressing (and garlic bread if you want to!)

#2: Honey Chicken

Maybe you can say that I cheated a bit on this one, as I didn't make it all from scratch, but you have to start somewhere, right?

Ingredients
- Chicken
- 2 eggs
- Cornflour
- Kan Tong Honey Chicken Sauce
- Capsicum
- Rice

How to do it
1. Cut the chicken in pieces (and put rice to boil)
2. Beat the egg in a bowl and put cornflour in another bowl
3. Dip all the chicken pieces in egg, and then cover them with cornflour

4. Fry them till they are golden brown and cooked through

5. Heat the Honey sauce in the microwave for 1 minute, and then cover the chicken pieces with the sauce
6. Serve with rice and capsicum

#1: Chocolate Mousse

Ok, so here's the first recipe - chocolate mousse! This one is very simple and turned out very good!

Ingredients
- 200g dark cooking chocolate
- 1 egg
- 4 egg yolks
- 5 tbs of icing sugar
- 3 dl cream

How to do it
1. Melt the chocolate

2. Mix the egg, egg yolks and icing sugar

3. Whip the cream

4. Mix the chocolate with the eggs and icing sugar
5. And then whip in the cream - till it looks like this

6. Put in the fridge for 1 hour
And - bon appétit!

Stine's Eatables

I have always been the most terrible cook I know - which means that I learned how to boil potatoes last year (at age 21), that I have yet to make a proper meal for myself (cereal will do) and that I didn't know at the age of 15 that you are not supposed to put the cardboard under the frozen pizza into the oven... (Yes, I have tried!)

However, the last couple of weeks I have started my "journey on becoming a better cook" and surprisingly it has been incredibly fun! So to challenge myself (and after having watched the Julie&Julia movie) I decided to make a FOOD BLOG (who would have thought???) where I try to make 5 recipes EVERY week. I will take pictures of the results (which will probably give you some good laughs) so that you can judge whether I have been successful or not...
