#17: Chicken Fillet with Roasted Vegetables

We had this for dinner last night and it was delicious!

Ingredients
- Chicken fillets
- Potatoes
- Carrots
- Mushrooms
- Red onion
- Garlic
- Oil
- Chicken gravy

How to do it
1. Cut the potatoes in wedges, cut the carrot in small sticks, cut the mushrooms in half and cut the red onion in wedges
2. Put all the vegetables in an oven proof tray, add garlic cloves and put oil over all of it - season to taste (I used salt, pepper and garlic&herb spice)

3. Put in the oven on 220C for 30-40 minutes - stir it occasionally (every 10 minutes)

4. Cook the chicken fillets and season well
5. Make the chicken gravy (I just used a 1-2-3 gravy from Norway)
6. Put it all on a plate - ready to serve!

#16: Chocolate chip cookies

Ingredients
- 250 g butter
- 2/3 cups of caster sugar
- 200g sweetened condensed milk
- 2,5 cups of self raising flour
- 125 g white chocolate chips
- 250 g milk chocolate chips

How to do it
1. Cream the butter and the sugar together
2. Add milk
3. Slowly add flour
4. Add choc chips
5. Place in small balls on tray, press down a bit with a fork
6. Cook for 10-15 minutes on 180C.

#15: Breakfast Omelet

Sorry that I haven't posted for ages! Been a crazy week - but have a couple of different recipes that I will put up today! Here's an omelet I made last week:

Ingredients
- 4 eggs
- Cucumber
- Capsicum
- Ham
- Cheese
- Salt
- Pepper

How to do it
1. Beat the eggs in a bowl
2. Cut the vegetables and the ham in pieces, and grate the cheese
3. Mix it all in the bowl and season with salt and pepper
4. Put some butter in a frying pan, and put it all in

5. It is done when golden brown

#14: Cinnamon Rolls

On Thursday I made these cinnamon rolls - they turned out pretty well! It takes a little while to make them, but it makes more than 40 buns and they are great to have in the freezer.

Ingredients
- 5 dl milk
- Yeast
- 1 egg
- 1 ts salt
- 150 gr sugar
- 2 ts cardamon
- 200 g butter
- 1 kg flour

How to do it
1. Melt the butter and heat the milk - mix it together
2. Mix the flour, the cardamon, sugar and salt
3. When the butter and milk are luke warm, put the yeast in
4. Then mix it all together
5. Mix the egg and then put it in the dough
6. Knead the dough - show muscles!:)

7. Let it then raise in 1/2 hour - 1 hour, put the oven on 220C

8. Cut the dough in half
9. Form it like a roll and then flatten it with a rolling pin

10. Put butter, sugar and cinnamon on - as much as you want

11. Then roll the dough together like a sausage
12. Cut 2 cm slices of the sausage, like shown on the picture under. Put them on a plate with baking paper and press them down a bit

13. Let the buns raise for another 1/2 hour
14. Put them in the oven for 15 minutes on 220C until they are golden brown

#13: French Province Chicken

Yesterday Asle and I had French Province Chicken for dinner - yum! I will start making more recipes from scratch soon, it is just that we have all these left over 1-2-3 boxes and sauces etc. from when I didn't know how to make "proper" food - and they have to be used before they run out of date! So - here you go!

Ingredients
- Chicken
- French Province Chicken sauce
- 2 cups mushroom
- 1 onion
- 60 ml Cream
- Rice

How to do it
1. Put the rice to boil
2. Cut and fry the chicken
3. Add onion and mushroom
4. Add French Province Chicken sauce and 60 ml cream - let it simmer for a couple of minutes

#12: Chocolate Soufflé

Ok - I didn't get to take a picture of this one when it was done, cause it disappeared!?? Hehe.. But it turned out well and is extremely easy to make, definitely a recipe for everyone - even people like me!

Ingredients
- 200 g dark cooking chocolate
- 200 g butter
- 200 g flour
- 200 g sugar
- 1 ts baking powder
- 4 egg

How to do it
1. Melt chocolate and butter together in a casserole (The best way to do this is to have a big casserole with boiling water, and then you have a smaller casserole in that water - that way the chocolate doesn't burn! But don't get any water in the chocolate..)
2. Mix flour, sugar and baking powder in the casserole with chocolate and butter
3. Mix in one egg at a time

4. Put it all in a small form you can put in the oven

5. Cook for 7-12 minutes on 160C and serve with vailla ice cream

#11: Chicken Fajitas

It has been a really busy week, so haven't been able to put anything up here, but will try to catch up on it very soon! Here's a chicken fajitas recipe that we made for our connect group last Tuesday!

Ingredients
- Chicken
- Onion
- Capsicum
- Pineapple
- Enchiladas spice
- Fajitas/Wraps
- Grated cheese
- Sour Cream
- Enchilada salsa
- (Can also be served with a simple salad)

How to do it
1. Slice the chicken and fry it on high heat
2. Add capsicum, onion and pineapple
3. Add Fajita-spice and fry for a couple of minutes

4. Put the chicken etc. in the wraps, and roll them together, stick a toothpick in to make sure they don't open again

5. Put cheese on top of them, and put them in the oven on 200C for 5 minutes

6. Take them out when they are ready and serve with salad, sour cream and salsa!

#10: Pasta Bake

Ups, now it has been almost a week since I posted here - which means that I haven't made food in almost 6 days! (Which means that it has been a really busy - but AMAZING - week!) Last night I made a pasta bake. It turned out pretty good!

Ingredients
- Chicken
- Dolmio Pasta Bake Sauce
- 1 1/2 cup grated cheese
- 2 cups pasta
- And I also added some onion, garlic and mushroom

How to do it
1. Boil the pasta for 8 minutes and put the oven on 220C
2. Cook the chicken (and the onion, garlic and mushrooms for a few minutes)
3. Put the pasta, the chicken (+ onion, garlic and mushroom) in a baking dish
4. And add grated cheese on top
5. Cook for 15 minutes or until golden brown

#9: Quiche Lorraine (Ham Pie)

This is a French recipe, a delicious ham pie, known as Quiche Lorraine. It might look a bit hard to make, but it is actually very easy! If I can do it, anyone can...

Ingredients
- 180 g flour
- 150 g butter
- 2 tbs water
- 1 tbs oil
- 1 onion
- 1 box ham
- 2 eggs
- 2 dl milk
- 3 dl cheese
- 1/2 ts salt
- 1/2 ts pepper

How to do it
1. Put the flour in a bowl and crumble it together with the butter (if that makes sense? Take your rings off, girls!) Then put in 2 tbs of water till it becomes one firm dough
2. Put it in the fridge for one hour and then put it in a round form that goes in the oven for 10 minutes on 200C
3. Fry the onion till it is "see through" and cut the ham in small pieces
5. Mix the eggs, the milk, the cheese, the salt and the pepper in a bowl
6. Put the ham and the onion on the dough that has already been in the oven for a few minutes
7. Then put the mixture of cheese, eggs and milk on top before you put it in the oven for another 15-20 minutes on 200C

Yogi Tea

I used to not like tea, but when I was home for Christmas my mum introduced me to her "Yogi tea", and it is actually really good and organic! This one is cinnamon spice taste, and it is really good with a bit of honey. It also comes with sweet chili taste!:) Perfect for a study night!

#8: Thai Cashew Nut (Vegetarian)

I am completely in love with thai food at the moment, so I am trying to learn how to make it all from scratch:) The other day I made a vegetarian cashew nut dish with basil and sweet chili sauce, so good and really healthy!

Ingredients
- Capsicum
- Broccoli
- Carrot
- Lettuce
- Sugar peas
- Onion
- Cashew Nuts
- Basil leaves
- 2 tbs Sweet chili sauce
- 1 ts Soy sauce
- 1/2 ts Vanilla sugar
- 1 tbs Corn flour
- 1 tbs Water
- Garlic

How to do it
1. Cut all the vegetables in pieces and fry in a pan
2. Mix Sweet Chili sauce, soy sauce, vanilla sugar, water, some garlic and corn flour - make it as thick, strong or sweet as you like!
3. Put the cashew nuts in the pan, and then put the sauce over. Simmer for a couple of minutes

#7: Cookie Dough

The other day Asle and I were really craving Cookie Dough ice cream, so we drove to our closest Baskin & Robbins - just to find that it wasn't there anymore! So we went home and made our own cookie dough instead - makes a vanillia ice cream so much more exciting:)

Ingredients
- 1/2 cup flour
- 5 1/2 tbs sugar
- 2 tbs softened butter
- 1/8 ts vanilla extract
- 2 tbs water

How to do it
1. Mix the sugar and the butter together in a bowl until smooth
2. Mix in vanilla and water and then finally the flour until it is all well blended together
3. Wrap in cling wrap and freeze for 1 hour
4. Cut into small pieces and mix into softened vanilla ice cream (or even Cookies and Cream ice cream!) before you freeze for another 15 minutes

#6: Fruit Salad with Vanilla Dressing

We ate this one for dessert when having some great friends over last night!

Ingredients
- Apples
- Pears
- Grapes
- Pineapple
- Bananas (Optional! I don't put bananas in as I don't like it...)
- 1/2 l water
- 3 dl sugar
- 1 1/2 ts vanilla sugar
- 1 ts aniseed

How to do it
1. Boil the water and the sugar in a casserole, add vanilla sugar and aniseed and let it boil for 10 minutes, then cool it down (in fridge if you're in a hurry) while doing nr. 2
2. Cut all the fruit in small pieces and have them in a bowl
3. Put the salad dressing in the bowl with fruit when it is cold
4. Serve with vanilla ice cream!
